The Chef

Kévin Legoy

A local boy, Chef Kévin Legoy is no stranger to the kitchen.
After training at Domaine Les Hauts de Loire (2 Michelin stars at the time), he joined the renowned Ritz brigade in 2017 to further hone his skills.
Two years later, he joined the prestigious Collection Saint Siméon***** with the desire to reconnect with the Norman local produce he holds so dear.

In 2023, encouraged by Chef Morgan Gremillon, Kévin Legoy took the helm of the kitchen at
Auberge de la Source. The tone was set: great classics are revisited with colour and indulgence.

This art and music enthusiast aims to offer guests of Le Romanesque a modern,
personal menu, sometimes surprising with its subtle pairings.
The region’s producers, with whom Chef Legoy works closely, remain at the heart of his priorities.
His determination and constant self-questioning are the values that inspire his seasonal, locally sourced cuisine.

The Head Bartender

Maël Ribeiro

At Maison Douce Époque, gastronomy meets the French art of living. The Bar des Dames is led by Head Bartender Maël Ribeiro, whose modern vision of mixology enhances the guest experience.

With nearly ten years of experience in luxury hospitality and fine dining, he has worked in prestigious establishments in France and abroad. His career notably took him to Ashford Castle in Ireland, an iconic five-star hotel, where he creates seasonal cocktails inspired by garden produce and hosts spirits tastings for an international clientele.

He then continued his career at Le Normandy in Deauville, a renowned establishment on the Normandy coast, as Assistant Head Bartender. There, he supervises the teams, organises masterclasses on leading spirits and helps maintain the service standards of luxury hospitality.

WSET-certified in wines and spirits, Maël now develops a signature cocktail menu at Maison Douce Époque, inspired by seasonality, exceptional ingredients and the elegance of gastronomy, in the spirit of leading maisons and establishments recognised by the Michelin Guide.
